Tim teaches the 16 and 17 year olds in Sunday School at church and he challenged them that if they read their scriptures every day for a month he would bring them a treat. So...I volunteered to make them a cake and Tim was all for the idea. Well this Sunday was to be the day that we'd bring the cake. I told Tim what I was planning on doing and he said "Wait. That's way too nice. Let's save that for us, and we can just take the kids cinnamon rolls."! lol So sorry to the two people who showed for his class-you missed out on great cake. BUT...you did get some awesome PD cinnamon rolls-so not a total loss. Anyway...here is my cake. I've dubbed it the Galaxy Chocolate Cake. Or the best cake in the Galaxy. Whichever you prefer.
Yeah...I didn't take a cool...food blog/artsy photo of this cake. But I think that this normal, everyday life, cake sitting in the fridge pictures does it justice. I mean...I think it looks pretty good. So this is what I did.
Galaxy Chocolate Cake
Begin by cooking two 8" circle chocolate cakes
Raspberry jam on top of the bottom layer
Followed by chopped up raspberries and strawberries on top of the jam
Then whipped cream (I made it from heavy whipping cream) on top of the berries
Second circle cake on top.
Whipped cream all the way around the cake.
Chocolate sauce accent on top
Mixed berries in the center on top
And then here's the kicker...I chopped up Galaxy chocolate and sprinkled it all over the cake, with one full square in the middle of the berries on top.
I made the whipped cream chocolate by adding chocolate sauce to it.
My mom would make cakes like this. She wouldn't spread cream all the way over it, and she wouldn't add any sugars etc...to the whipped cream. They were SOOO good her cakes. But Tim has a sweet tooth, so I made it chocolate whipped cream for a little extra flavor. I really liked it, even though I only had one slice. We took it over to family dinner at the Ellertson's house and then were so full afterward that we gave the rest to Tim's cousin and his wife who live below us.

ReplyDeleteWhen I saw the title of this post I thought you made (or bought) a cake made with Galaxy chocolate... my mouth was watering. Your cake looks (and sounds) yummy. I loved mom's cakes, my fav was the apricot jam though.
